Fool-Proof Flat Bread


My shopping list never includes bread. It does, however, include flour, salt and olive oil. This bread is super quick and easy. It's a staple. Ready in 45minutes.

INGREDIENTS: 
For 8 servings:
250g flour (plain or self-raising)
1 teaspoon salt
1 tablespoon olive oil
150ml warm water


For 2 servings:
60g flour
pinch salt
1 teaspoon olive oil
40ml warm water

Make sure your hands are washed for this one! Sift the flour into a large mixing bowl and sprinkle the salt on top. Drizzle the olive oil over the flour. Add about half of the water and mix with your hands. It feels so good! Keep adding the water and mixing it in until a dough forms. 

Knead the dough for 5 minutes: pull it and push it and turn it until it becomes smooth and springy. Put it back into the mixing bowl and cover with a teatowel. Let it rest for at least 15 minutes- enough time for you to check out this website : ilikegiving.com 

Disinfect a worksurface and dust it with flour. Split the dough into the amount of servings you want and roll each part out. You want it to be about 3mm thick.

Heat up a non-stick pan over a high heat. Turn the heat to medium and add a flat bread. After about 40-60 seconds, turn it over. This will require a bit of judgement over when it it ready.

Cook all of the breads in this way and serve immediately.

For all you creative people out there: you can add seasonings to the bread when it's in the pan. I like to lay a slice of cheese onto the bread when it's cooking on the second side and scatter dried herbs on top.

I come from a house where the cupboards are brimming with every ingredient you could ever need. Baking goes like this: find a recipe that looks good, go to Mum's beautiful kitchen, get out the ingredients, bake it. Simple.

Now I'm a student. I live in a lovely house with three even lovelier ladies. Baking goes like this: look in the cupboard at what I have, spend hours trawling the internet for a recipe that I can make without trekking to Tesco's to unnecessarily spend money, bake it. And it usually turns out weird. But occasionally, there are surprises: recipes which turn out great and cost only a few essential ingredients. 

So I will keep all of these in one place. Little treasures that allow you to save money for more important things whilst maintaining a healthy diet.
